Roasted Vegetable Enchiladas

Ingredients
  1. 1 large red pepper, chopped, seeds removed
  2. 1 medium zucchini, chopped
  3. 1 medium yellow squash, chopped
  4. 1 large onion, chopped
  5. 1 tablespoon olive oil
  6. Salt and pepper
  7. 1 can black beans, rinsed and drained
  8. 1 teaspoon ground cumin
  9. 1 teaspoon chili powder
  10. 2 garlic cloves, minced
  11. 1 jalapeƱo, minced
  12. 1/2 cup chopped fresh cilantro
  13. Salt and pepper, to taste
  14. 2 cups red enchilada sauce
  15. 9-10 small corn tortillas
  16. 2 cups shredded Monterey Jack cheese
